If you enjoyed the first two Assassin’s Creed games then your next step is to play the Ezio collection. It is a cohesive trilogy of 2, Brotherhood and finally Revelations. From there you can try Creed 3, although it has a slower start than the other games. If you want what many consider the “best” of the old style of AC games then you should try 4 “Black Flag”, the standalone DLC is freedom Cry. Rogue is a bit of a side story but basically used the same engine and mechanics like ship combat and whatnot. Assassin’s Creed Liberation also came out around this time, but remember it’s a Vita port and plays a bit more like 3 instead of 4, which has a much smaller scope.
Starting with Origin the game takes a different angle in terms of gameplay and mechanics and it’s a dividing point for many fans, I dropped the series here myself, but give it a chance, you might like it. Oddessy is the next game in line that seemed to be very favorably accepted and then we have Valhalla, the never ending game that keeps getting more content.
Unity was the series’ attempt at a multiplayer co-op Assassin’s Creed and was the first in the series to be developed primarily on the PS4. It had some stumbling blocks in terms of gameplay while Syndicate (which apparently doesn’t work on PS5) refined what Unity did while returning to single player focused story, although you get to control two assassins which gave you a lot of flexibility in how you chose to approach the game.
Oh and the “chronicles” collection of Assassin’s Creed games are side scroller arcade-y style of Assassin’s Creed. If you want to try them I recommend starting with China and then India, as Russia is both the hardest and, in my personal opinion, the worst.
